Book authors
Marcia Nhikian Nelms, PhD, RD Dr. Nahikian Nelms is an associate professor and director of the Didactic Program in Dietetics at Southeast Missouri State University. Prior to teaching, Dr. Nihikian Nelms practiced in both public health and clinical settings for 12 years, specializing in the care of patients in hematology, oncology, and bone marrow transplant. Today Dr. Nihikian Nelms continues to consult for agencies providing medical care of HIV and AIDS patients.

Sara Long Anderson, PhD, RD Dr. Anderson is an associate professor and director of the Didactic Program in Dietetics in the Department of Animal Science, Food and Nutrition at Southern Illinois University, Carbondale. Prior to obtaining her PhD in health education, she practiced as a clinical dietitian for 11 years. Dr. Anderson has been the nutrition education/counseling consultant for Carbondale Family Medicine since 1986. She is an active leader in national, sate, and district dietetic association, where she has served in numerous elected and appointed positions. Dr. Anderson served as president of the Illinois Dietetic Association from 1993-1994, and has been an invited speaker at over 30 professional meetings.
